Crispy Garlic Chile Oil

Ingredients
1/2 c. canola oil
8 large cloves garlic, finely chopped
1 large shallot, finely chopped
1 dried shiitake mushroom
1 tbsp. toasted sesame seeds
1 tsp. sugar
1 1/2 tsp. sweet paprika
Kosher salt
4 dried chiles (chiles de japones or chiles de arbol), seeds removed
3 tbsp. toasted sesame oil

Directions
In small saucepan, combine oil and garlic. Heat on medium, gradually frying garlic until golden brown, 6 to 10 minutes.
Quickly strain oil into heatproof bowl and drain garlic on paper towel. Return oil to pan, add shallot and gradually fry until golden brown, about 6 minutes.
Meanwhile, in blender, finely chop dried mushroom, sesame seeds, sugar, paprika, and 2 teaspoons salt. Add chiles and pulse to form pepper flakes slightly bigger than average. Transfer to heatproof bowl.
When shallots are cooked, immediately pour strained hot oil over chile mixture and let mixture cool to room temperature, about 8 minutes. Stir in sesame oil, then fried garlic and shallot. Makes 3/4 cup.
